Creamy Vegan Pumpkin Spice Oatmeal

    Yes, vegan oatmeal is creamy and delicious! And yes, I hopped on the
    pumpkin spice bandwagon and added some to this recipe. The best part is this recipe is so
    easy, just put all the ingredients in your slow cooker and let time do its magic!

    Ingredients:

    3 Cups of Water or Almond Milk (if you want a creamier taste, I prefer almond milk)
    1 Cup of Steel Cut Oats
    1 small can of pumpkin (15 oz)
    2 teaspoons of pumpkin pie spice
    2 tablespoons of maple syrup

    Instructions:

    In your slow cooker, add all the ingredients into the pot. Set your slow cooker to low for 6 hours. I like to do this right before bed. My slow cooker will turn off and keep it warm after it is done. The house smells so delicious when I wake up, and I can’t wait to pour my bowl!

    Toppings:

    Pecans
    Granola of choice
    Cranberries
    Brown Sugar
    *for extra pumpkin spice, I add some Pumpkin Spice Creamer (yes, they sell vegan versions too!)
