What’s for Dinner?

IMG_6317Broccoli Rabe and Sausage. This recipe has just a few ingredients and is very easy! Also, notice the picture where my son is actually eating his broccoli?! Though this recipe doesn’t guarantee your kids will eat broccoli, it does provide a flavorful way to cook it 😉 If I ever find a recipe that ensures all vegetables will be eaten, I’ll be posting it immediately!

Serves 4

Ingredients:
*  1 ½ pounds of broccoli rabe (1 large bundle)

*  Salt

*  2 tablespoons of extra-virgin olive oil

*  1 pound Italian hot or sweet sausage (buy any sausage your family likes. I love the selection at Trader Joe’s)

Step 1. Trim ends of broccoli and cut into small pieces (3 inches or so)

Step 2. Bring 2 inches of water to a boil in a skillet. Salt water. Add broccoli and simmer for 8-10 minutes, drain.

Step 3. Return skillet to the stove and heat olive-oil over medium-high heat. Add sausage (make sure to remove from casing), brown and crumble for 6 minutes (or until completely cooked). Add broccoli and stir to combine. Let flavors mix and serve!

  1. I love broccoli rabe! A favorite in our house is to make it into a pasta sauce (sort of like a pesto). Just blanch the rabe in boiling water for about 45 seconds and then rinse with cold water. Squeeze it out and chop roughly (or throw it into a food processor). Heat a cup of olive oil until hot but not smoking. Add a huge tbsp of minced garlic and swirl away from the heat for 30 seconds. Add the broccoli and saute. Salt and pepper heavily and add a dash of chili flakes. Stir, then turn the heat down and simmer for 3 minutes. You can add the cooked pasta right in and add whatever else you feel like!
