FOOD IDEAS
- Green Banana Muffins: Okay, so you will just have to trust me on this one, but these are SO GOOD! They have spinach in them, so they come out green, which is fun, but the color can also put you off a little bit. Just taste them, and you won’t even notice that they’re healthy. All the ingredients are common. I found spelt flour at Whole Foods, and I used one real egg instead of doing the flax egg. It’s a great chance to get your kids to eat a healthy muffin by saying that it’s green because the “Leprechaun” made it that way! (P.S. It’s another recipe I love from Kristin Cavallari’s book.)
- Leprechaun Lunch: I loved this healthy St. Patricks Day lunch! You could also substitute in green beans, peas or another sandwich using the shamrock cookie cutter. Have fun with it! Your kids definitely will☺
- Rainbow Fruit Skewer: Take a skewer and stack a purple grape, a blueberry, a piece of kiwi, a pineapple chunk, a piece of an orange, and, lastly, a raspberry for a pretty, fun and healthy snack!
